Instructions: Preheat the oven to 175°C and grease a 20 × 20 cm pan. Beat the butter until a soft dough forms, spread it over the base of the pan and bake for 17 minutes. For the filling, whisk the eggs with the lemon filling, pour over the baked base and return to the oven for 20–25 minutes. Leave to cool and dust with icing sugar before serving.
